This chicken chili recipe must be one of the absolute best For Healthy and tasty meal! We have devoured this dish on many occasions in our home. This recipe is perfect for chilly days it’s even perfect for those days when you just want chili. I know everyone has experienced the thought of “I wish I had a good chili recipe.” I mean who seriously loves canned chili?? Those days are long behind us now with this recipe. Look NO further this Black Bean Chicken Chili recipe will leave your MOUTH watering & wanting MMmore & MMmore ….
Beans
• 1 pkg. black beans
• 1 whole onion
• 1 celery stalk
• 1 whole carrot
• 1 tablespoon olive oil
• ¼ cup chili powder

Ground Chicken
• 2 lb. ground chicken
• ¼ cup chili powder
• 1 teaspoon paprika
• 1 large onion (diced)
• 2 Tbsp. cumin
• 2 tablespoons olive oil
• 1 tomato sauce 8 oz
• 2 poblano peppers (chopped)
• 14oz chicken broth
• 1 serrano pepper (chopped)
• 14 oz diced tomato
• 1 jalapeno
• 2 tbsp. corn starch
• 3 garlic cloves
• ¼ cup hot water

Black Bean Chicken Chili Recipe
First off you want to start with your black beans. Empty package of beans into a strainer to sort out and rid of any rocks or bad beans. Rinse thoroughly. Empty beans into large pot or pressure cooker, slice onion with peel in half (Not Chopped!), snap whole carrot, & one celery stalk (cut into 3 pieces). Place all vegetables into large pot, add garlic, water, & olive oil. Bring to a boil on med-high heat.

Stovetop
Bring to a boil on med-high heat, reduce temperature to low & let simmer for

Pressure Cooker
Cook on med-high heat for 30 minutes. Let pressure drop naturally!! (Steam extremely HOT!!!)

Chicken Cooking Process
In large pot on med-high heat place in olive oil. Sauté onion, poblano peppers, serrano peppers, jalapeno, and garlic cloves. Once veggies are sautéed add in spices and mix together.
Next step you want to add in your ground chicken and brown with the sautéed veggies and spices. Cook ground chicken until browned just as you would ground beef. Add in tomato sauce, & chicken broth and stir into chicken. Allow to simmer for 30 minutes.
In the mean-time in between time you can strain your black beans. Remove all big chunks of the veggies we added to the beans.
Back to the Chicken Chili OK.., we want to add in corn starch to thicken the chili (mixed w/ hot water). Stir up chicken chili & cornstarch mix well. Allow to simmer for about another 5 min. Next, add in your beans about 2 cups or MORE if you are a bean lover! Freeze remainder for next go round.

Garnishes
Cilantro, avocado, sour cream, cheese (of your likings).
Several serving options, serve over rice, tortilla chips, Fritos, tortilla, or just have a bowl of chili!
